About
What an interesting tasting coffee! Coffee cherries are harvested at peak ripeness and dried on raised covered beds for 21 days, before being pulped and dried again to acceptable moisture content of 10 to 12 %
These coffee are Catimors, which is a cross of Caturra and Timor Hybrid ( naturally occuring hybrid of Arabica & Robusta. )
We taste fruit like characteristics reminisence of honeydew, melons and cherries, and hints of tropical fruits like Pineapple. There is also an ice wine sweetness, which adds to the winey flavours, with a medium body to the coffe.
This coffee was roasted as a filter roast on the Geisen 6kg, but we realised the solubility and extraction was within good range on both filter and espresso, so hence, its an Omni roast.
